Anticipation has been brewing for CRAFT by Side Hustle and after a successful soft opening period CRAFT has announced that on February 2nd, 2024, Abu Dhabi’s inaugural microbrewery and gastropub will officially open in The Galleria, Al Maryah Island. Born from the passion to introduce a distinctive concept to the region, CRAFT promises a revolutionary artisanal food and beverage experience for UAE residents and visitors. 

Created locally in partnership between CRAFT LTD and Side Hustle Brews & Spirits, CRAFT by Side Hustle is Abu Dhabi’s new and exciting lifestyle destination for the community welcoming both beverage enthusiasts and true foodies alike. Whether stopping in for quick lunch, a relaxing drink after work with colleagues, or a games night with friends, the artisanal brewpub is the new hangout for those who appreciate bo flavours, innovation, and artisanal creations. 

CRAFT offers a casual and social setting with an ever-evolving menu. The restaurant serves freshly prepared baked goods daily and features a Southern US and Louisiana-inspired menu, including a full smokehouse offering, as well as traditional favourites. Guests can indulge in signature dishes like smoked brisket, burnt ends, Cajun po’boys, jambalaya, and shrimp and grits, all paired perfectly with its freshly brewed beverages, which change regularly so there’s always something new to try! 

As the region’s first-ever microbrewery, all the action can be witnessed by patrons. CRAFT produces freshly brewed hops, unique cocktails, and specialty coffee. The microbrewery expects to create up to seventy-five craft beers, as well as its own flavoured hard seltzers, ginger beer and tonic water, in addition to serving Side Hustle signature gin, rum, and whiskey. Still and sparkling water will be served as complementary to all guests, which has been purified using the same carbon technology as the brewery. 

The design of the venue is reflective of its artisanal identity. The archway is made from its very own brewery barrels, and the furniture has been hand built by specialist carpenters both locally and internationally, with a feature mural painting designed and executed by UAE based artist aAleksandra Sova 

Guests can expect southern-style live music, exceptional Happy Hours, stand-up comedy, quiz nights, afternoon catch-ups on the promenade, and tech-enabled games such as Augmented Reality Darts, all while enjoying freshness and flavour like never before.

Born and raised in France, Chef Adriano Cattaneo was appointed Global Executive Chef of LPM Restaurant and Bar in mid 2022.

The talented chef's love for cooking began in the kitchen of his father’s restaurant, where he gained knowledge of seasonal cookery techniques. Thanks to his early fascination for food, he was inspired to opt for a career path in hospitality. With hard work and perseverance, Chef Adriano earned his Culinary Arts degree in 2005 at L’Ecôle Hôtelière de Saint-Quentin, in Yvelines, France. His culinary foundations were largely based on French techniques and European gastronomy.

Where are you from, and did your nationality have any influence in pursuing your professional career?

I am from France and grew up in Normandy where my family owned a restaurant. Growing up I was surrounded by my parents always cooking, and I believe that watching them in the kitchen and seeing their own cooking techniques is something that propelled me to pursue my career.

Salt Baked Sea Bass

Did your family teach you the art of cooking? If not, who did?

My love for cooking began in the kitchen of my father’s restaurant, where I gained knowledge of seasonal cooking techniques. Thanks to my early fascination for food, I was inspired to opt for a career path in hospitality. I was lucky enough to work alongside Chef Jean Louis Nomicos and he really helped me discover the potential I had when it came to my culinary skill.

He was always willing to share his knowledge and techniques with me, and I soon became one of his most trusted apprentices. I would also like to mention Chef Joël Robuchon who was my mentor for 8 years. He guided me through the beginning of my culinary career. During those 8 years, I learned more than I could have ever imagined. He taught me the importance of technique, creativity, and using fresh ingredients. But most importantly, he taught me how to work hard and always put my guests first.

At what age did you know that you have a passion for cooking, and what was the first dish you ever prepared?

I have fond memories of when I would spend time with my grandfather in Normandy. We would collect apples from the trees in his garden and make delicious apple donuts. I would assist him in the kitchen and prepare the donut maker to cook them.

What kind of dishes do you like preparing most, and what ingredients do you prefer using the most?

Since starting at LPM Restaurant & Bar one of my favourite dishes to cook has become the Homemade Lobster Mafaldine. This dish brings together the flavours of the coastal line and the ribbon shaped pasta really works to hold the flavour of every ingredient within its ridges.

My cooking is very much in the traditional French style: simple, fresh, and always with an eye towards flavour. Olive oil is definitely one ingredient I could never cook without! My father is Italian, therefore I have been surrounded by Mediterranean culture all my childhood and the only recipe that works for me is one that uses olive oil. It is certainly among some of the most integral and traditional ingredients. Not only for cooking but also for preparing and seasoning authentic dishes.

What are your favourite cuisines and why?

Thanks to the nationalities of both my parents, my mother being French and my father Italian, I grew a passion for both of these cuisines as I grew up. I was always surrounded by incredible food from two cultures that have so much to offer in terms of food. French cuisine is for me one of the richest cuisines in the world because of its exceptional products, how fresh it is, and how a dish can be simple yet so impactful when it is made with proper and fresh ingredients.

Do you give your professional recommendation in what you serve when preparing a meal for a famous person, or do you leave it up to them?

When a celebrity comes through our doors, of course it can be exciting to host them, however our level of service and our list of recommendations remain the same for everyone. Our service and quality do not change depending on our guest and we offer the same standard to everyone. But as with every guest we have come to our restaurants, we leave it to them to decide what they would like to order of course.

What are some of the goals you aspire to achieve in the coming period?

In addition to the two new openings last year (Limassol last June and Doha since mid-November), we have some extremely exciting news to share regarding the global expansion of LPM Restaurant & Bar in 2023. Additionally, one of our key priorities will be recruitment. I am excited about bringing on young talent to my team so they can develop and grow alongside LPM and feel invested in its success.

99 Sushi Bar & Restaurant, a bespoke Japanese restaurant for eclectic foodies offering an array of classic Japanese dishes to the most avant-garde, innovative creations, was recently awarded with a prestigious Michelin Star.

We spoke to Head Chef Thinus van der Westhuizen.

What inspired you to become a chef and how did you get started in the industry?

From a very young age, I had the desire to work in a kitchen. The Hustle and bustle of a busy service attracted a specific crew and I wanted to be part of that crew. The ability to express yourself creatively, and challenge yourself to become better, looked very appealing to me. My father was a great cook and I got placed to work in restaurants from the age of 16, where over the years I had the opportunity to work with immensely talented chefs and work my way through the brigade. Some have become mentors and great friends.

What makes the concept of the restaurant unique?

Within the ultra-competitive dining scene of the UAE, and amongst the many Japanese restaurants out there, over the 5 past year, 99 has become a go-to restaurant for people of taste, who truly appreciate authentic haute cuisine from the Land of the Rising Sun. The many awards received, and the 1 MICHELIN Star to top it all off this year, must show that we are consistent and devoted to offering the finest quality and service. What is special about 99 is its human size, the extensive beverage list, the use of star ingredient Atlantic bluefin tuna, farmed responsibly, according to the requirements of the UN and FAO. Our team's skill, savviness and Old Continent hospitality. We serve all the expected (and not so expected) traditional Japanese delicacies, made with only the finest premium ingredients, and secret recipes made only in 99, such as our very own and unique soy sauce, for one!

Dining Setting at 99 Sushi Bar & Restaurant

What is your signature dish and what makes it so special?

I don’t have a specific dish that stands out in particular. I believe my personal signature is more the ability to bring out the best in produce, make them shine if you will. I love incorporating natural elements into dishes, by using fire, smoke, air and flame, as we were taught as kids in South Africa. At 99, the techniques we use do exactly that. We bring out the best in the products we use, with specific and intricate techniques. Such dishes as our Umami crystal toast, 99 jewel or our newly added robata grills showcase a level of haute cuisine and that we are very proud of.

What can we expect in 2023 and beyond for the restaurant?

We will work hard to maintain our standards of excellence and live up to the Michelin expectations, of course. We will also source more and more local produce to support the efforts of the UAE in that perspective. Sustainability is one of our top priorities in our choice of suppliers and we aim at reinforcing this even more. We will continue to research and get inspired, in order to keep 99's signature dishes, but also bring new items to the table, constantly pushing back our creative boundaries.

Abu Dhabi is emerging as a leading dining destination. What do you think the future holds for the dining scene in Abu Dhabi?

Indeed, Abu Dhabi is fast becoming a culinary destination, with Al Maryah Island as a flagship for the dining scene. We are lucky to be here, in the middle of the beating heart of the capital city's gastronomy. In the future, I think we will see many home-grown concepts popping up, which will help us to create a unique identity. We have a few projects of our own up our sleeve... to be disclosed later in time!
